However, we made til ki gajak using Diabexy sugar (a sweet fiber) because jaggery has a high glycemic load, similar to white sugar. This means it can cause an increase in blood sugar levels.

Til ki gajak has a unique, crunchy texture and a good balance of sweetness and nuttiness. This sweet is very popular in the northern parts of India, especially in states like Uttar Pradesh, Madhya Pradesh, and Rajasthan.

Here, we are sharing a til ki gajak recipe using low glycemic load ingredients, which is good for the overall health of everyone. This recipe is also best for people with diabetes because it doesn’t increase blood sugar levels and can help to reduce them.

Why do we use Diabexy sugar in this recipe?

We use Diabexy sugar in this recipe because it's an excellent sugar substitute for those looking to control their blood sugar levels. Unlike most sugar substitutes that contain high EGL ingredients like Maltodextrin, maltose, dextrose, or sucrose, Diabexy sugar is made with fructooligosaccharide, which has an EGL of zero. This means it doesn't get absorbed in the intestine and gets flushed out without impacting blood sugar. This makes it a versatile and healthier choice for managing diabetes while enjoying sweet flavors.

How to Make Til ki Gajak
     

Roast Sesame Seeds:

  • Take 60g of white sesame seeds.
