Paratha is an Indian flatbread that has different stuffings. Parathas are typically named after their stuffings like paneer stuffing called paneer paratha, and aloo stuffing called aloo paratha.
Spinach is called in Hindi, and when we add palak as stuffing, it is called Palak Paratha. Palak paratha is crispy on the outside and soft on the inside. It is usually made with flour, spinach, and spices.
These parathas are healthy, delicious, and easy to make. Spinach fulfills iron deficiency in the body. Palak paratha can be enjoyed any time of the day but it is usually preferred at breakfast and lunch. Most Indian mothers prefer parathas for lunch boxes for their kids.
The problem with paratha is that it is made with just normal flour which has a high glycemic load. causing an increase in blood sugar levels.
We are sharing a palak paratha recipe made using low glycemic load ingredients. It is very good for health and doesn’t impact blood sugar levels. It is also a very good health choice without compromising the taste.
Palak Paratha Ingredients
- 120g Diabexy Atta - Diabexy atta is made using low EGL ingredients and the EGL value is 7 instead of other types of atta with EGL values between 50 to 60. It is also made from nuts and seeds, giving it high protein & fiber content.
- 50g Palak Puree – A blend of cooked spinach and has vitamins and mineral which support overall health.
- 20g Chopped Onion – It is an onion that is cut into small pieces and adds flavor to the dish and contains antioxidants.
- 10g Green Chili – It is a spicy pepper that adds heat and flavor to the dish. It also has vitamin C which boosts the immune system.
- ½ tsp Red Chili – It is a spicy fruit from the capsicum family which enhances the flavor of dish.
- ½ tsp Garam Masala – A mixture of multiple spices that enhancing the flavor and aroma of dish.
- ½ tsp Dhaniya Powder – It is made from ground coriander seeds and adds aromatic flavor and enhances the overall taste.
- ½ tsp Haldi Powder – Also known as turmeric powder which is made from dried turmeric. It adds special flavor, and vibrant colors to the dish. It has anti-inflammatory and antioxidant properties which can contribute to overall well-being.
- ½ tsp Jeera – It adds depth and warmth to the dish.
- ¼ Amchur Powder – It is made from dried raw mangoes which add tangy and sour flavor into the dish.
- Salt - Use salt which has important minerals necessary for our bodies to stay healthy, like NutroActive Mineral Salt.
How To Make Palak Paratha
- First, take 100g of Diabexy Atta and fresh palak leaves, then make palak puree from palak leaves.
- For making Paratha, add 1 cup of Diabexy Atta in a bowl and add 20g of chopped onions, 10g of chopped chili, and add salt to taste
- Next, add ½ tsp Red chili, ½ tsp Garam masala, ½ tsp Dhaniya powder, and ½ tsp Haldi Powder.
- Then Add ½ tsp jeera and ¼ tsp Amchur powder.
- Mix all the ingredients well.
- Then Add ½ cup Palak Puree and mix again.
- Make a soft dough of mixing.
- Roll the dough into a round shape and place it on the tawa.
- Bake on tawa, apply desi ghee to it, and cook from both sides.
- Your Palak Paratha is ready.
An EGL (Estimated Glycemic Load) of 4.5 per paratha is considered very low, which is beneficial for someone with diabetes. It tastes amazing with the green chutney, curd, and pickle.
